Matcha Bubble Tea

 200 g tapioca pearls (sold in Korean, Taiwanese grocery stores )
 2 l water
 300 ml Milk of your choice
 200 ml Heavy cream or coconut cream for my vegans
 2 tsp matcha powder
 2 Glasses of hot water
Syrup
 1 Glass of water
 ½ Glass of white sugar
 ½ Glass of brown sugar

Boil 2L of water, then cook tapioca pearls for 30min over medium heat and let it sit for 30 minutes.

Meanwhile boil 2 glass of water and mix it well with matcha powder.

For the syrup, heat brown sugar, white sugar and water in a saucepan until you get a syrup (about 2 minutes).

Coat cooked tapioca pearls with prepared syrup.

Mix milk and cream.

Spread the preparations over the 4 glasses, starting with tapioca pearls, tea then milk.

Bubble tea can be enjoyed with large straws that can suck up the pearls, if you don't have one of those, you can use spoons.
