class=\"cooked-dir-content\">\n<p>Rincez le riz \u00e0 l&rsquo;eau froide puis faites cuire le riz dans 2 volumes d&rsquo;eau pour 1 volume de riz pendant 40 minutes \u00e0 couvert.<br \/>\nV\u00e9rifier au bout de 25 min que l&rsquo;eau ne s&rsquo;est pas totalement \u00e9vapor\u00e9, si c&rsquo;est le cas ajout\u00e9 assez d&rsquo;eau pour couvrir le riz.<br \/>\nSalez \u00e0 la fin de cuisson<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"\u00c9tape 2\">\n<div class=\"cooked-dir-content\">\n<p>Dans un saladier, m\u00e9langez 3 jaunes d&rsquo;oeuf, le jus de citron et 4 c\u00e0s d&rsquo;eau.<br \/>\nSur une eau fr\u00e9missante et \u00e0 feu doux, passez le m\u00e9lange au bain marie pendant 5-7 min sans cesser de fouetter jusqu&rsquo;\u00e0 ce que le sabayon s&rsquo;\u00e9paisse.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"\u00c9tape 3\">\n<div class=\"cooked-dir-content\">\n<p>Retirez du feu, ajoutez le beurre coup\u00e9 en d\u00e8s et le piment de cayenne puis fouettez.<br \/>\nSi la sauce est trop \u00e9paisse, ajoutez 1 \u00e0 2 cuill\u00e8re d&rsquo;eau pour fluidifier.<br \/>\nSalez \u00e0 votre convenance.<br \/>\nFilmez et r\u00e9servez.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" saumon pour retirer tout exc\u00e9dant d&rsquo;humidit\u00e9 \u00e0 la surface.<br \/>\nCot\u00e9 peau, badigeonnez l\u00e9g\u00e8rement d&rsquo;huile d&rsquo;olive, cot\u00e9 chair, badigeonnez de la antiadh\u00e9sive chaude, passez cot\u00e9 peau en appuyant l\u00e9g\u00e8rement \u00e0 l&rsquo;aide d&rsquo;une spatule pour \u00e9viter que la peau ne se contracte.
