Je voulais \u00e9crire une recette de ph\u00f4 depuis un moment mais sachant que les gens pr\u00eats \u00e0 cuisiner 6h n&rsquo;\u00e9taient pas majoritaires il a fallu trouver une alternative qui conservait (au mieux) l&rsquo;authenticit\u00e9 de cette cuisine vietnamienne.<\/p>\n\n\n\n<p>Le ph\u00f4 a un temps de cuisson long principalement \u00e0 cause du bouillon, fait \u00e0 partir d&rsquo;os ou de chair de boeuf et d&rsquo;aromates qui sont au pr\u00e9alable caram\u00e9lis\u00e9 pour donner une saveur et une couleur suppl\u00e9mentaire au bouillon. Pour aller plus vite j&rsquo;ai donc skip\u00e9 cette \u00e9tape mais quand m\u00eame garder la caram\u00e9lisation des oignons et du gingembre pour intensifier le go\u00fbt d&rsquo;un bouillon de commerce. J&rsquo;ajoute \u00e9galement le sucre de palme qui est important pour l&rsquo;\u00e9quilibre<\/p>\n\n\n\n<p>Pr\u00e9f\u00e9rence pour le bouillon dashi qui apporte l&rsquo;umami n\u00e9cessaire mais vous pouvez tr\u00e8s bien utiliser un bouillon de boeuf.<\/p>\n\n\n<p><\/p><p><\/p><p><\/p><p><\/p><p><\/p><p><\/p><p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Gros challenge pour cette recette.
