Chicken salad x fresh goat cheese & green apple

Warmer weather come with the desire for less heavy meals. Today I suggest a refreshing salad that fulfills its mission in terms of taste. A slight twist with a softer dressing thanks to apple juice (don’t make this face, trust me).

 2 chicken breasts
 200 g lamb's lettuce
 200 g fresh goat cheese
 20 cherry tomatoes
 3 tablespoons olive oil
 30 g parmesan shavings
 1 tablespoon of vinegar
 1 tablespoon of apple juice
 1 teaspoon of mustard

Dice the chicken breasts and put in a bowl with a teaspoon of salt, pepper and paprika

In a frying pan, heat a tablespoon of olive oil.
Fry the chicken until golden brown.

Whisk together the olive oil, vinegar, apple juice and mustard to make the vinaigrette dressing.

In a bowl, combine the lamb's lettuce, halved cherry tomatoes, apple pieces, fresh goat pieces and vinaigrette dressing.

Divide the salad into the dishes, place the diced chicken and parmesan shavings on top of it.
