Classic Bubble Tea

This dairy or fruity delight has become popular in occidental countries for the past 2 years but this Taiwanese drink has been made on the island since the 1980s and had spread quickly to the majority of East Asian countries.

Tapioca pearls that sit on  the bottom of the drink bring an interesting texture and chew that gives a dessert dimension to the drink. 

For everyone’s pleasure, bubble teas comes in several versions, the classic  recipe is made with black tea but you can also enjoy it with other teas (like this matcha tea recipe available here), replace it with juice or fruit syrup for example.  Even tapioca pearls can be substituted by fruit pearls.  I would also do an article to learn how to make it at home.

As you may have understood, the recipe I give you today can really be adapted to everyone’s tastes so have fun with it !

bubble tea

Yields4 Servings

 200 g tapioca pearls (sold in Korean, Taiwanese grocery stores )
 6 bag of black tea like Earl Grey
 2 l water
 500 ml hot water for black tea
 300 ml milk of your choice
 200 ml Heavy cream or coconut cream for my vegans
Syrup
 1 glass of water
 ½ glass of white sugar
 ½ glass of brown sugar

Boil 2L of water, then cook tapioca pearls for 30min over medium heat and let it sit for 30 minutes.

Meanwhile boil the water for black tea and let the tea infuse, the tea should be cold for the final recipe.

For the syrup, heat brown sugar, white sugar and water in a saucepan until you get a syrup (about 2 minutes).

Coat cooked tapioca pearls with prepared syrup.

Mix milk and cream.

Spread the preparations over the 4 glasses, starting with tapioca pearls, tea then milk.

Bubble tea can be enjoyed with large straws that can suck up the pearls, if you don't have one of those, you can use spoons.
