So I know what you’re thinking, “Red berries go in a pie and certainly not on poultry” I’ll try to convince you by asking you to focus for a moment on the flavors that these lovely fruits can bring. First we have the element that decided me to choose this combination: acidity, which give a good kick and freshness to the chicken. In cooking, acid is an important element that allows the balance of the 5 other flavors (Salty, sweet, biterness, fat, umami). The red fruits contains a little bit of sweet so this flavor does not take over the rest.

 4 boneless chicken thighs
 400 g frozen red berries
 1 rosemary sprig
 2 tbsp honey
 2 tbsp lemon juice
 2 tbsp sesame or olive oil
 8 bok choys
 2 tbsp balsamic vinegar or soy sauce
 1 tsp chili powder
 2 garlic cloves
 salt, pepper

In a saucepan, heat honey, lemon juice, red berries and rosemary leavesfor 10 minutes over medium heat.
Stir regularly and allow to cool.
(If you don't want berries seeds, strain it through a fine mesh sieve).

In a bowl, salt, pepper the chicken thighs, add a clove of chopped garlic, pour the previous mixture and mix well.

Cover with plastic wrap and let marinate for at least 2 hours in the refrigerator.

Preheat the oven to 200°C

Drain the thighs and set the marinade aside.
Bake for 25 minutes with a grill setting

Turn over and brush the thighs with the remaining marinade several times during cooking.

Cut the bok choys in half lengthwise.

In a frying pan heat 2 tbsp of oil then add the minced garlic and chilli

Put the bok choys without overlapping in the pan.
After 2 minutes, add the balsamic vinegar or soy sauce to caramelize for 2 minutes.
